The Evolution of Nightjar: From Roastery to Multi-Site Identity
Following the success of Nightjar’s flagship roastery at Alserkal Avenue, I joined the team at Allistar Cox Building and Interiors to oversee the brand’s spatial expansion throughout 2022–2024. The focus lay in translating the brand’s signature “grit and authenticity” into new, diverse environments.
We reimagined the existing concept, introducing new materials that maintained the brand’s authentic, “gritty” edge while offering a more nuanced experience. This allowed us to craft a unique personality for each new location that was tailored to its specific site and clientele, while ensuring the core “Nightjar vibe” remained unmistakable. The result is a series of spaces; distinct in character, yet unified by a shared DNA of raw, soulful hospitality.
